DROITWICH SALT
You may think Droitwich is an unlikely location to find naturally occurring salt but think again! Brine springs have existed beneath Droitwich Spa for over 200 million years, and it is the pure and flavoursome salt from these springs that Will & Gillian Kerton of Churchfield Saltworks have brought to the gourmet salt market.
These crystal clear springs have a higher salinity than seawater, and thus produce a salt with a distinctive, intense flavour. This means the salt lends itself well to cooking where only a small amount is needed to enhance foods. Working with Michelin Star Chef, Brad Carter, of Carters of Moseley, the Kertons have developed flavoured salts, such as Charcoal, Coastline and Beech Smoked, that complement certain foods, from game and meat to fish and BBQs.
The salt itself is crystalised using solar heat or heat from a biomass boiler. Once crystalised and dried, it is harvested by hand. Droitwich Salt is a natural, pure product – it is not iodised and contains no additives such as anti-caking ingredients.
