PENRHOS SPIRITS

Made by two gin-loving, farming friends, this artisan gin is created with home-grown ingredients in the Herefordshire Marches. Penhros Farm, the family home of Dickie and Sally Williams, is where the magic happens. Together with family friends, Charles and Kate Turner, as well as their daughter Harriet, they craft Penrhos spirits.

One of the aims behind the brand was to use ingredients grown on the farm – with cherry and apple orchards already established, the team planted blueberries, raspberries and strawberries and used the farm’s honey and grain, as well as rose petals from the garden, to make their distinctive spirits. Foraged elderflower from hedgerows is the stand-out ingredient in the award-winning Apple and Elderflower gin.

It took two years of research and recipe testing before the first spirit – the London Dry – was launched. Other flavours followed, including a blueberry gin liqueur, a honey-spiced rum and a non-alcoholic botanical.

As demand took off, Dickie and Charles converted an old cow shed into the distillery and inserted a 147-litre copper still, nicknamed Connie after Dickie’s grandmother who used to rear calves in the barn. All of the farm fruit that goes into the spirits is soaked in alcohol for 24 hours to release the flavours before being gently distilled along with a host of other botanicals. To create Penrhos Spirits’ signature flavour, the gin is rested for 48 hours – a process known as Single Shot Distillation – producing a truly handcrafted spirit.
