RUBY’S FUDGE
When Ruby Williams was deciding what to do after leaving school, the fudge-maker probably wasn’t on the list! While Ruby had always worked in the food industry in some way or other (selling hog roasts, creating biscotti, biscuits and marshmallows), it wasn’t until the Market Coordinator at Worcester Farmers’ Market suggested she have a go at making fudge to fill a sweet spot in the line-up of stalls at the market, that Ruby took on board the idea.
Not one to shy away from challenges, Ruby began creating butter fudge in 2010 using the traditional boiling and creaming method. She perfected the recipe using just three ingredients – sugar, evaporated milk and heaps of Gloucestershire farmhouse butter.
Ruby has since developed her award-winning recipe to create a range of 12 other fudge flavours, including Chilli & Sea Salt, Cherry Bakewell and Peanut Butter, with seasonal flavours also making appearances. Six of the fudge flavours have won Great Taste awards, with some even having won it more than once.
